It has been an exciting journey figuring this out and failing and trying again. We now have something growing on all of our plants for the most part and have tasted some of our crops.
Our Zucchini plants have been growing very well. We have picked and eaten two from our plants so far and they have been amazing! The one we used in our omelettes and the other we used to make zucchini noodles for our ‘spaghetti’ and meatballs last night.
We have already had a taste of two cucumbers and man oh man! They are amazing tasting and super fragrant! Tom was cutting one the other day while I was putting laundry in. I came upstairs to the kitchen and was welcome by the most amazing smell! I love fresh vegetables! We have been enjoying them as snacks and in tomato cucumber salads a lot this week!
We have three types of tomatoes growing and we have tomatoes of each type started but haven’t tried anything yet. They’re all still green and growing.
We have a few types growing (red and yellow bell peppers), and two types of hot peppers (chillis and jalepeno type ones). We have no idea which bell peppers are which and which hot peppers are which at this point since all are green still but it’s fun to watch them grow.
We have our two plantings of beets growing still. The first ones are not ready yet but hopefully soon. I love roasted beets!
So we still have carrots. Hopefully what we have (I think it’s about 5) grows and we can have one meal out of them.
I think I am most excited about our spaghetti squash. We may have planted too many plants as they seem crowded but we’re learning! We have about 10 spaghetti squash growing at last count. They vary in size too so we should have them at staggered times.
